Cacao was first introduced in Vietnam by the French in the late 19th century. In the provence of Ben Tre, in the Mekong Delta, the Trinitario cacao grows in the shade of coconut trees. It is in this area that the Vietnam War officially began in 1959. These days, all is quiet except the sound of machetes cutting down cacao pods as a result of an initiative by the Vietnamese government to give land grants to farmers. It is here that the duo of Vincent Mourou and Samuel Maruto brought back beans to their chocolate factory in Saigon. 

We first made this bar back in 2014 and decided to revisit one of our old favorites!
